Early in his career, food writer Michael Ruhlman had his first taste of duck confit. It would be really nice if you replaced the book I have with the new one considering the many nitrite weight errors. I'm afraid to use the darn thing.

Pages are missing! WTF! Would like money returned to my account. The first and last time I ever buy a so called book from Google play. Actually feel I got robbed!

It's not an instant cook book. If you don't have patience you will hate it. Many recipes require days of prep. But the results are amazing

Michael Ruhlman has written and coauthored many cookbooks, including The Book of Cocktail Ratios. He lives in New York City and Providence, Rhode Island.

Brian Polcyn has owned and operated many of Detroit’s finest restaurants and is the coauthor, with Michael Ruhlman, of Charcuterie; Salumi; and Pâté, Confit, Rillette. He has served on the full-time faculty of the Schoolcraft College Culinary Arts program since 1997.
